Industrial gelatin is a hydrophilic colloid and protective colloid. It can be used as a stabilizer, emulsifier and amphoteric dissolving agent of hydrophobic colloid. It can coagulate charged particles into blocks in water and be used as a clarifying agent for liquor and spirits.
